Apple Cinnamon Chicken

The title of this recipe might throw you off, but don’t be fooled. This Apple Cinnamon Chicken dish is fantastic and a must-try. In fact, we bet that if Guy Fieri tried this, he’d promptly say, “Winner Winner, Chicken Dinner” after just one bite.

Ingredients:Apple Cinnamon Chicken

  • 4 chicken breasts
  • 2 tbsp butter, divided
  • 2 tbsp apple butter
  • 1 medium sized apple, peeled, cored, finely chopped
  • 1/3 cup golden raisins, roughly chopped
  • 2 tsp cinnamon
  • salt

Directions:

In a medium size pot, melt 1 tbsp butter over medium low heat. Add in chopped apples along with a pinch of salt. Allow the apples to cook down and soften, between 10-15 minutes. Add raisins and apple butter and cook over low heat for 15-20 minutes. The apples will continue to melt down into the apple butter and the raisins will become plump. Remove from heat and allow to slightly cool.

Using a knife, carefully butterfly each chicken breast 3/4 of the way through. Lay chicken breasts flat on a cutting board and sprinkle with salt and cinnamon on both sides. Stuff the chicken by adding about 1 to1 1/2 tbsps of apple filling to the center of each butterflied chicken. Roll chicken breast up and sew the seam together with a toothpick or small bamboo skewer.

Melt the remaining butter in a skillet over medium heat. Preheat oven to 350. Place chicken seam side down in the skillet. Brown chicken on all sides and transfer to a casserole dish. Pour remaining filling into the dish and place in the oven. Bake for 20-30 minutes until the chicken reaches an internal temp of 165.

Allow chicken to rest for 5-7 minutes before slicing.
