Cashew and Caramel Corn

There’s nothing better on a winter’s night than snuggling up with a big bowl of popcorn and a good movie. Skip the movie theater, gather the blankets and indulge your popcorn cravings with this sweet and salty treat at home.

Ingredients:Cashew and Caramel Corn

  • 8 cups popped popcorn
  • 1/2 cups roughly chopped cashews
  • 8 oz package individually wrapped soft chewy caramels, unwrapped
  • coarse salt
  • 1 oz heavy cream, divided

Directions:

Preheat oven to 250 degrees. Place popcorn and nuts in a large bowl.

Using the method of a double boiler, melt caramels – place water in a small sauce pot and bring to a bowl. Find a metal or glass bowl that fits over top the pot. As the steam rises from the boiling water, it will melt the caramel. Once the caramel is melted, turn off the burner and add in the 1 oz. of cream and a pinch of salt. Whisk to combine until the mixture has a silky sheen.

Pour caramel over popcorn mixture, stirring to coat thoroughly. Transfer to a large baking sheet, spreading in a single layer. Bake 20 minutes, stirring twice. Let cool completely, before breaking up. Store in an airtight container.
