Classic Chicken Soup

Feeling a little under the weather? Yep, it’s that time of year. No worries though as we have the perfect chicken soup recipe to soothe your soul and get you back on your feet. We firmly believe that good food can lift one’s spirits and brighten one’s day.

Ingredients:Classic Chicken Soup

  • 1 rotisserie chicken, skin removed and meat diced into large chunks
  • 4 cups chicken broth
  • 2 cups of water
  • 1/2 tsp salt and 1/2 tsp fresh ground pepper
  • 1/2 onion, diced
  • 2 large carrots, peeled and sliced
  • 2 large ribs celery, sliced
  • 2 cloves garlic, minced
  • 1/2 bunch of fresh thyme, tied together with kitchen twine


Over medium heat, add about 2 tablespoons of olive oil to a large dutch oven. Add veggies and thyme sprigs, season with salt and pepper and cook for about 4-5 min. Add in water and broth, bring to a boil. Lower the heat simmer until the vegetables are tender, about 20-30 minutes. Add the chicken and continue to simmer until the chicken is heated through. Serve and enjoy!
