Looking for a simple fish dish that’s sure to impress? This recipe totally fits the bill. The prep is easy and the skillet does most of the work for you. The recipe is very flexible and works well with any white fish, so let the market price be the deciding factor as to what you serve.

By creating this incredible crust on the fish, you’ll sear in the flavor. Your fish will come out moist and perfectly flaky. We recommend plating this along with our Orange Spinach Rice Salad.

Herb & Caper Fish



  • 4 small white fish fillets (tilapia, cod, orange roughy, sole)
  • 4 tbsp butter
  • 2 tbsp fresh thyme, roughly chopped
  • 1 tbsp fresh dill
  • 2 cloves garlic, finely chopped
  • 2 tbsp capers and juice
  • salt and pepper


In a large skillet, melt butter over medium-high heat. Prep fish by patting it dry and season both sides with thyme, dill, garlic, salt and pepper.

Place the fish in the pan and sear for 3 minutes. Don’t move the fish while searing (if you do, your “crust” won’t form). Flip the fish using a spatula (we recommend investing in a fish spatula), add in capers and juice over top the fish. Sear other side for about 3-4 minutes. Plate and spoon remaining butter, capers and juice from the pan over the fish.
