Lemon Roasted Tilapia

This simple seafood dish is stunning; just look at the presentation – gorgeous! As the lemons roast away, they become slightly sweet and the tilapia absorbs all of the fresh flavor from the zest and thyme. We recommend plating this up with our Harvest Carrots or our Broccolini Crunch

Lemon Roasted TilapiaIngredients:

  • 2 fresh tilapia loins
  • 2 lemons, zested and thinly sliced
  • 2-3 scallions, sliced in diagonal strips
  • 2-3 springs of thyme, stripped and chopped
  • Kosher salt and freshly ground black pepper

Directions:

Preheat oven to 350. Line a baking sheet with foil or parchment paper and arrange lemon slices, slightly overlapping. Make the ‘bed’ of lemon slightly larger than the fish. Season fish, on both sides, with salt, pepper and thyme. Arrange fish directly on the lemon slices. Sprinkle zest evenly over the fish, top with scallion and remaining lemon slices. Roast in the oven until cooked through, about 15 to 18 minutes; the tilapia should flake easily with a fork.

Transfer to a serving plate and present with roasted lemons on top. Garnish with some extra thyme.
