Purple Rice Pilaf with Feta and Walnuts

I know what you are thinking, that is one good looking side dish. This rice pilaf is super sexy and tastes oh so good. Perfect for date night, pair this side with steamed fish or grilled chicken.

Spring is on it’s way. Pack it up with a simple salad and take it on a romantic picnic.

Ingredients:Purple Rice Pilaf with Feta and Walnuts

  • 1 cup purple rice (sometimes called black rice or forbidden rice)
  • 1/2 cup orzo
  • 1/2 cup chopped walnuts
  • 1/2 cup feta cheese, crumbled
  • olive oil
  • salt and pepper
  • 2 TBSP butter

Heat a pot over medium with butter. Once the butter has melted, add orzo to toast. Stir the orzo into the butter and watch it for 3-4 minutes. Once the orzo starts to brown, add in rice. Pour in 2 ½ cups of water, season with salt. Cover and bring to a simmer. Simmer rice for 15-20 minutes until all the liquid is absorbed. Toast the walnut in small pan over medium heat. Once you smell the nuts they are done. Use a fork to fluff the rice. Season the pilaf with pepper and gently fork in the walnuts and feta with a drizzle of olive oil. Garnish with an additional crumbed of feta.
