Salmon with a Nectarine Relish

This is one of our favorite spring and summer recipes because nectarines are one of my (Tinsley) favorite fruits. When I walk into the market and see local nectarines on display, I’m like a kid in a candy store. Instantly our cart is full of peak nectarines.

Every once in a while we play around with this recipe and place the salmon and nectarines on the grill. It totally takes the recipe to the next level. If you find that your nectarine is not quite ripe, halve it and throw on it on the grill. You will love the results.

Ingredients:Salmon with a Nectarine Relish

  • 2 wild caught salmon fillets
  • nectarine, peeled and diced
  • ¼ small orange bell pepper, minced
  • 1 small shallot, minced
  • 1 tbsp fresh parsley – chopped
  • olive oil
  • salt and pepper

Directions:

Preheat a skillet with olive oil over medium heat. Season each side of the salmon with salt and pepper. Place your salmon in the skillet and cook on both sides for 4-5 minutes to your desired doneness. In a small prep bowl, add nectarine, shallot, parsley and bell pepper. Season with salt and pepper and toss to combine.

Remove salmon from the skillet and plate. Top your salmon with a large spoon full of the nectarine relish.
