Starfruit Rice Salad

Every time I walk by a starfruit at the market, I’m reminded of my best friend, Vicki. Vicki and I have known each other since the dawn of time (or so it feels that way). Through middle and high school, we were stuck together like glue. As the years have gone by, our lives have changed, but our life-long friendship has always remained the same.

One of Vicki’s favorite fruits is the starfruit. So, I wrote this recipe with her in mind and hope when she sees this, she smiles.

Ingredients:Starfruit Rice Salad

  • 2 cups cooked jasmine rice
  • 1 cup dried cherries
  • 1/2 cup walnuts
  • 2 tbsps scallions, sliced
  • 1 starfruit, sliced (reserve a few for garnish)
  • salt & pepper
  • olive oil

Directions:

Place walnuts in a dry skillet and toast over low heat – this should only take a few minutes; your nose will know when they are ready. To a large prep bowl, add rice. Drizzle rice with olive oil and season with salt. To the rice add cherries, walnuts and starfruit. Toss to combine and garnish with reserved starfruit and scallions.
