Apple Spice Cupcakes

During September, I choose to use apples in my cupcakes. Apples make a great addition to any cupcake mix. They steam while baking, which keeps the batter moist and delicious. Try to use them in your next cake batter and let me know what you think!

Ingredients:Apple Spice Cupcakes

  • 1 box of spice cake baking mix
  • 1 1/4 cup of apple juice
  • 1/3 cup of apple sauce
  • 3 eggs
  • 4 -5 golden delicious apples – peeled, cored and sliced into large chunks
  • 1 container of whipped cream cheese frosting
  • 1 tablespoon of pumpkin pie spice
  • gold sprinkles


Preheat your oven according to the directions on the box - will probably be 350.  In a food processor, add your apple chunks.  Pulse them until they are finely chopped and look like super thick apple sauce.  In a bowl, add your baking mix, apple sauce (not the one you just food processed), apple juice and eggs.  Beat the mixture together on low with hand mixer for about two minutes, until the mixture becomes smooth.  Fold in your finely chopped apples.

Once all of your ingredients are combined, line your cupcake pan with paper liners.  Use an ice cream scooper to load your cupcake pan, only fill each cup about 3/4.  Bake as directed per box – should be about 20 minutes.  After baking, allow to cool before adding the frosting.  If you don’t wait for the cupcakes to cool, your frosting will melt!

Open your frosting and add 1 tablespoon of pumpkin pie spice.  Mix well.  Once your cupcakes are cool, use a pastry knife to apply frosting to each cake.  Garnish with an extra sprinkle of frosting and gold sprinkles.  Enjoy!
