Sometimes we just need to veg out, literally! Have you ever craved a big bowl of veggies? Maybe after a day of just eating junk food? Yeah, us too and this recipe is perfect for one of those times. This recipe would also be a nice side dish for Thanksgiving.

Ingredients:Autumn Vegetable Medley

  • 10-12 brussel sprouts – ends removed, halved and outer leaves removed
  • 1 rustic potato –peeled and cubed
  • ¼ red pepper – sliced
  • ¼ yellow pepper –sliced
  • 2-3 scallions – chopped with whites and green separated.
  • olive oil
  • salt & pepper

Directions:

Preheat your oven to 350 degrees. In a medium bowl, add all veggies EXCEPT green scallions. Add a good drizzle of olive oil and season with salt & pepper. Mix to evenly coat. Spread everything out on a baking sheet and pop it in the oven for 15 minutes. Remove and use a spatula to flip; the undersides should be a gorgeous brown color. Place back in the oven and cook for another 5-10 minutes. Remove and serve. Garnish with the remaining greens from scallions.
