Yay, its June, the start of summer! Everything is finally green and the colors of summer are starting to pop. We are so very ready for the summer season and summer foods. We love this time of year because it’s the start of the farmers markets in our area. Our favorite Sunday morning activity is outdoors – walking around and checking out the offerings from our local farms.

Snap peas are a must have item from the farmers market. We always buy a double batch because Tinsley loves to snack on raw snap peas with hummus throughout the day. Check out one of our favorite ways to enjoy snap peas during the summer season.

Brown Buttered Sugar Snap Peas with Pine NutsIngredients:

  • 3/4 lbs. sugar snap peas, trimmed
  • 3 tbsp butter
  • 1/2 cup pine nuts
  • salt and pepper
  • 2 oz. shaved parmesan cheese

Directions:

Cook the sugar snap peas in a large pot of salted boiling water until crisp tender, about 2 minutes; drain.

In a skillet, heat the butter over medium heat until the butter starts to bubble and turn golden brown, about 3 minutes. Add the pine nuts and stir until lightly toasted, about 2 minutes. Stir in the sugar snap peas and cook until heated through; season with salt and pepper. Transfer to a serving plate and garnish with shaved parmesan cheese.

  1. Yum!!!! I’m glad sugar snap peas are in season :) Our pastor has a big garden and he brought us some! I totally want to make this!
