The tomato - Is it a fruit or vegetable?

Scientifically, the tomato is a fruit because they are developed from the ovary in the base of the flower and they contain the seeds of the plant like blueberries, raspberries, strawberries and oranges. The term ‘vegetable’ is more generally used for other edible parts of plants like lettuce, cabbage and celery. As far as chefs are concerned, tomatos are considered ‘vegetables’ because they are used in savory dishes rather than sweet.

Either way, tomatoes are an essential flavor of summer. If you’re looking for the perfect summer pasta salad, look no further. This easy-to-make salad is not only beautiful, but delicious. Make this for a summer time lunch or light dinner.

Ingredients:Caprese Pasta Salad

  • 1 pint of cherry tomatoes – halved
  • 8oz of baby mozzarella balls (bocconcini) – halved
  • 1 lbs short cut pasta – choose your favorite
  • 2-3 scallions, whites and greens chopped
  • 4-6 basil leaves – roughly chopped
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • salt and pepper

Directions:

Bring salted water to a boil and add pasta. Cook pasta until al dente. In a small prep bowl, whisk together the olive oil with red wine vinegar. Season with salt and pepper, adding in scallions and basil. Pour dressing over top of the pasta and set aside for about 30 minutes. This will allow the warm pasta to hang out and absorb the dressing. Before plating, add in tomatoes and mozzarella. Garnish with a small basil leaf.
