Cherry Nutty Rice

Tired of your boring, basic rice side dishes?  Here’s a delicious side that includes rice, pasta and cherries.  You can serve it with a variety of meals such as chicken, ham or pork.  Make it for a special holiday or birthday meal, or with nightly dinners.

Ingredients:Cherry Nutty Rice

  • 2 tablespoons butter
  • 1/2 cup orzo
  • 1 1/2 cups jasmine white rice
  • 2 2/3 cups chicken stock
  • A generous handful dried cherries
  • 1/3 cup walnut, roughly chopped and toasted
  • 4 scallions, thinly sliced
  • salt and pepper


Place a sauce pan over medium heat and add butter.  Once the butter melts, add orzo and rice.  Toast until slightly golden, stir in stock and cherries.  Bring to a boil, and then reduce heat to simmer.  Cover and cook for 15 to 18 minutes.  Fluff the rice with fork and combine with walnuts and scallions to serve.
