Cinnamon Apple Sauce

We’ve all probably had our fair share of apple sauce ever since we were kids.  Or perhaps you haven’t had apple sauce since you were young.  Apple sauce is not only yummy, it’s a great healthy snack or side dish.  Here’s my take on cinnamon apple sauce – adult version.  Enjoy!

Ingredients:Cinnamon Apple Sauce

  • 4-6 apples, peeled, cored and cubed
  • 2 cups apple juice
  • 2 tbsp brown sugar
  • 2 tbsp pumpkin pie spice
  • 2 in fresh ginger, peeled and sliced
  • olive oil

Directions: 

Yield about 1 apple per person.  Heat skillet over medium heat with a light coasting of olive oil.  Add apples, brown sugar and spice.  Allow to cook for 2-3 mintues.  Add apple juice to deglaze and cook down for about 15 mintues.  Use less time if you prefer a crisp bite to your apples.
