Corny Corny Catfish

We love getting fresh fish from our local market and coming up with delicious and healthy seafood meals.  On a recent trip to our market, we saw they had some fresh catfish, so we decided to give it a try.  I’ve had catfish before, but my husband had not.  So here’s a simple catfish dish I whipped up for him that I’d like to now share with you.  Have you ever tried catfish?

Ingredients:Corny Corny Catfish

  • 2 fresh catfish fillets
  • 1 cup of stone ground corn meal
  • 2-3 springs fresh thyme – finely chopped
  • salt and pepper
  • 3 cups of vegetable oil
  • honey

Directions:

In a large skillet, heat vegetable oil over medium heat.  In a shallow bowl, add your cornmeal and thyme.  Mix together with your fingers.  Remove your fish from the frig and use a paper towel to pat them dry.  Remember a wet fish will make your oil splatter and could burn – ouch!  Season your fish with salt and pepper and drop them into your cornmeal mixture.  Press the fish into the cornmeal to make sure you have a good coating of each side.  When you oil comes to 365, add the fish and fry on each side for about 5 minutes until the fish reaches an internal temp of 140 and is golden brown.  Remove from oil and drizzle with honey for sweetness.

Serve with a simple salad and my amazing sweet potato fries.
