Fruity Tootie Bedrock Cupcakes

Our Fruity Tootie Bedrock Cupcakes rock! They’re so fruity and flavorful. Jason’s brother, Jeff, noted that they tasted like gourmet Fruity Pebbles and reminded him of the Flintstones, hence the name. That conversation and this recipe inspired me to do a stone age 30th birthday party for one of my girlfriends. These cupcakes were a hit!

Ingredients:Fruity Tootie Bedrock Cupcakes

  • 1 box strawberry cake mix
  • 1 1/3 cups blueberry/pomegranate juice ( I used Fruit2Day)
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 3 tbsp sugar, divided into 3
  • food coloring: red and blue
  • 1 container of whipped cream cheese – allow to come to room temp
  • 1/2 container cool whip
  • 1 lemon – zested and juiced

Directions:

Preheat oven to 350 and place cupcake liners into your cupcake pan. Using an electric mixer, blend together dry mix, juice, oil and eggs in large bowl at low speed until moistened (about 30 seconds). Beat at medium speed for 2 minutes. Pour batter in liners, filling them about 3/4 full. Bake for 18-21 minutes. Cool in pan on wire rack for 15 minutes. Remove cupcakes from pan and allow them to cool completely before frosting.

While baking, prepare frosting and sprinkles. Using your electric mixer, blend cream cheese with lemon zest and juice for about 1 minute – just until it comes to a creamy consistency. Using a spatula, gently fold in your cool whip. About 5-6 folds should do it. Frost cupcakes as you wish by using a pastry knife or piping bag.

Add 1 TBSP of sugar to 3 small ramekins. In one container, add a couple of drops of blue to create blue sprinkles. Mix together with a fork until all the sugar is coated with the coloring. In the second container add 1 light drop red to make pink. Mix together with a fork until all the sugar is coated with the coloring. In the third container, add a drop of red and blue to make purple. Mix together with a fork until all the sugar is coated with the coloring. Note – if you aren’t getting the right color, adjust by adding more sugar or coloring to the containers.

Top each cupcake with a little sprinkle of each color. Enjoy!
