Golden Hasselback Potatoes

These potatoes turned out beautiful, didn’t they? We are so pleased that they were crispy on the outside and tender on the inside. This might be one of our favorite new ways to make potatoes.

Ingredients:Golden Hasselback Potatoes

  • 4 medium sized potatoes
  • 2 tbsp olive oil
  • 4 tbspo. butter
  • sea salt and fresh ground pepper

Directions:

Preheat the oven to 425. To each potato, using a sharp chef’s knife, begin making about 1/4 inch slices, working your knife all the way near the bottom of the potato, but not slicing all of the way through.

Arrange the potatoes in a baking tray and scatter some butter on top of each potato. Then drizzle the olive oil and sprinkle some sea salt and freshly ground black pepper.

Bake the potatoes for about 40 minutes or until the potatoes turn crispy and the flesh are tender.
