Greek Pork Skewers with Roasted Veggies

Healthy never looked so delicious. Who could resist this gorgeous platter of fresh roasted veggies topped with tender, Greek marinated pork? Obviously, not us, because there were no leftovers from this massive platter. It was so good that we eat ate it all – in just one sitting!

Ingredients:Greek Pork Skewers with Roasted Veggies

  • 1 cup plain yogurt
  • 1 pork tenderloin, sliced into bite size pieces
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tbsp Montreal Grill Seasoning
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced into half moons
  • 1 medium onion, sliced
  • 1 lemon, zested then halved
  • olive oil
  • salt and pepper

Directions:

Preheat a grill or indoor grill pan to high heat. Preheat oven to 350.

Combine yogurt with coriander, cumin, oregano, lemon zest and grill seasoning in a medium prep bowl. Add pork and coat with the yogurt mixture. Set aside.

Add sliced veggies to a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 15-20 minutes.

Thread marinated pork onto skewers (we recommend soaking the wooden skewers in water while the meat is marinating or use metal skewers). Brush grill pan with olive oil and grill meat 5 to 6 minutes on each side.

Remove veggies from the oven and plate. Place pork skewers on top of the roasted veggies and juice a lemon overtop.
