Green Lovers Rice Salad

We’ve all had a side of rice with our meals and it’s usually a pretty basic, simple rice or a store-bought mix full of preservatives.  Why not cook up something fresh, lively and healthy instead?  Jasmine rice is a wonderful white rice that accompanies a variety of dishes.  Liven it up with some fresh vegetables to make your entire meal taste even better!

Ingredients:Green Lovers Rice Salad

  • 2 cups cooked jasmine rice
  • 1 cup frozen green peas, thawed
  • ½ English cucumber, sliced into half moons
  • 2 celery ribs, sliced into half moons
  • salt and pepper
  • olive oil


Place your rice into a large mixing bowl. Places the peas, cucumber and celery in with your warm rice and season with salt and pepper. Drizzle with olive oil and toss to combine. Allow the flavors to combine.

Serve as a light lunch or a perfect side dish.
