Grown up Grilled Cheese

Grilled cheese has grown up and taken on a more “gourmet” look. Don’t be fooled though, this recipe is super easy. Once you try it, you will never go back to that old grilled cheese again! Pare this recipe with one of our fan favorite soups: Carrot and Cauliflower Soup, Pumpkin Bisque, or Lemon Drop Soup.

Grown up Grilled Cheese

Ingredients:

  • 4 tablespoons butter, at room temperature
  • 1/4 cup mayonnaise
  • 8 slices bread, we used sourdough, but choose your favorite
  • 2 tablespoons cream cheese, at room temperature
  • 8 slices of cheddar cheese

Directions:

Preheat a skillet over medium heat. Mix the butter and mayo in a small prep bowl until well combined.

Lightly butter one side of each of the bread slices with the mayo mixture, these will be the outsides of the sandwich. Add the cream cheese to the remaining mayo mixture and mix well to combine. Spread some of the cream cheese mixture on the other side of each of the bread slices, adding a slice of cheddar cheese on top of the cream cheese. Sandwich two slices together and place in the skillet. Cook until golden on the each side, about 3 minutes per side. Transfer grilled cheese to baking sheet in a warm oven (200 degrees) until all sandwiches and soup of your choice is ready.
