Guilt Free Mini Chocolate Cream Pies

Bathing suit season may be coming to an end, but that doesn’t mean we should stop counting calories. The holiday season will be here before you know it.  Don’t you want to look hot in that evening gown for your company party?  These 3-ingredient desserts are to die for; they’re guilt-free with less than 65 calories for 5. You could eat the whole tray and not worry about immediately getting on the treadmill. They’re perfect for kids and you can dress them up to be elegant enough to serve at a bridal shower or dinner party.

Ingredients:Guilt Free Mini Chocolate Creme Pies

  • 1 box sugar free chocolate pudding
  • 1 cup skim milk
  • salt
  • 1 package of mini phyllo shells
  • pearl candies for garnish (optional)


In a small bowl, combine your pudding with milk. Whisk them together with a pinch of salt for about 1-2 minutes, until the mixture absorbs the milk and there are no lumps. Cover with plastic wrap and chill for about 15 minutes to an hour. While you’re waiting for your pudding to chill, preaheat your oven to 300. Place your phyllo shells on a baking sheet and place in the oven for 10-15 minutes – just until they start to brown. Remove and allow to cool for about 15 minutes.

You can present these little cuties several ways. If you are just looking for a quick snack or dessert, you could spoon the pudding into the cups and be done. However, if you’re making these to feed a crowd you can also turn this is into a really elegant treat. Spoon your pudding into a zip top plastic bag. Zip the top and snip one of the end points to create a piping bag. If you have a piping bag or an icing pipe, you can use those as well. Pipe the pudding into each cup by creating a swirl, like soft serve ice cream. Place on serving platter and garnish with a few pearl candies.
