Harvest Carrots

Fill your dinner table with this colorful, eye-catching and delicious side dish. These stunning carrots will help give your family a dose of vitamin A and give your menu a splash of color.

Ingredients:Harvest Carrots

  • 1 bunch of rainbow carrots, peeled and trimmed leaving part of the stem intact
  • 1 tbsp. olive oil
  • 1 tsp. fresh thyme, chopped
  • salt and pepper
  • 1 lemon, zested and juiced


Preheat the oven to 450. In a small prep add carrots. Drizzle in olive oil and season with salt, pepper and lemon zest. Toss to combine. Place carrots onto a baking sheet and sprinkle with thyme. Roast until tender and edges begin to caramelize, about 20 minutes. Plate and finish with a drizzle of lemon juice.

    Aren’t they beautiful. We were able to find them at our local Harris Teether. We have also seen them at Wegmans and our farmers market. They are normally available during the Spring/Summer season.
