Jasmine Rice Citrus Salad

Simple yes, but oh so elegant! Pair it with chicken or pork, this side dish is perfect to dress up any simple protein. My recommendation is to try this rice with my Salmon and Veggie Skewers.

Ingredients:Jasmine Rice Citrus Salad

  • 2 cups cooked jasmine rice
  • 1 lemon, juiced and zested (cut a few slices before juicing for garnish)
  • 2 tbsp parsley, roughly chopped
  • salt & pepper
  • olive oil

Directions:

To a large prep bowl, add hot rice. Squeeze lemon juice on top of the rice. Drizzle with olive oil and season with salt and pepper. To the rice, add lemon zest and parsley. Toss to combine and serve.
