Jungle Cupcakes

One of my best friends growing up, Leia, is throwing a party. But not just any party. She’s throwing her son, Deklan, a party for his 2nd birthday, and I am super excited about it. As a surprise for him, I made these cute, little, jungle inspired cupcakes to match the theme of his bedroom. I like to show my friends how special their families are to me by making cupcakes myself, instead of buying generic ones from the store. They were quick and easy to make.

Ingredients:Jungle Cupcakes

  • 1 box of white cake mix
  • 1 can milk chocolate icing
  • 1 box of vanilla animal cookies
  • 1 bag of editable green Easter grass – cut into long strains and bunched into groups of 4
  • gold sprinkles for garnish

Directions:

Bake cupcakes as directed on the box.  Make sure you read the box to see what additional ingredients is needed to make the cupcakes, i.e. eggs, milk or oil.  Allow cupcakes to cool.  With a pastry knife, spread a thick layer of icing on each cake.  The icing poses as dirt, so it doesn’t have to be perfect.  Next, assemble the grass on the cakes by taking each bunch and firmly sticking them down into the cake.  Add one animal cracker to each cake next to the grass.  Finish the cakes by adding a few sprinkles to the cupcakes.  The sprinkles will serve as rocks, so just a few.  Voila!  Cute little cakes that will make the momma to be smile.
