Lime in the Coconut Chicken

We all know the song, “You put the lime in the coconut and you drink them both up.” Well, I don’t even know how or why, but somehow I got the song in my head. Thankfully, it inspired me to create this really awesome chicken dinner that impressed the both of us. The rich flavor of the coconut perfectly balanced the lime. We added in some grassy notes with the cilantro and finished with a sweet touch of honey. This dish had us dreaming of an island vacation.

Ingredients: Lime in the Coconut Chicken

  • 6 skin-on chicken drumsticks
  • 1 clove garlic, crushed
  • 1 inch of ginger, peeled and chopped
  • 1 shallot, peeled
  • 1 cup cilantro (save some for garnish)
  • 1/3 cup honey
  • 1 cup coconut milk
  • 3 limes, juiced and zested
  • salt and pepper


Combine all ingredients together in a food processor (except chicken). Pulse until pureed. Pour coconut marinate into a ziplock bag. Add chicken and chill for at least 1 hour. Preheat oven to 450. Transfer chicken to rack placed on foil-lined baking sheet, bake for 20 minutes; flip and bake until cooked through, roughly another 10 minutes. Plate adding cilantro and lime wedges for garnish.
