Lucky Cupcakes with a Chocolate Ganache

To celebrate Jason’s partial heritage (1/4 Irish), we wanted to create something fun and unique. Green beer isn’t our thing, and come to think of it, neither is corned beef and cabbage (ick). But cupcakes, we can do.

These “green velvet” cupcakes are sure to be hit at your St. Patty’s Day party. Our secret to getting a vibrant green color is to use green gel food coloring vs. the liquid. We made these as mini cupcakes and they were gobbled up before we knew it.

Ingredients:Lucky Cupcakes with a Chocolate Ganache

  • 1 box yellow cake mix – each brand is different. Make sure you read and ingredients on the package to bake as directed
  • green gel food color
  • 12 oz. milk chocolate chips
  • 8 oz. heavy cream
  • pinch of salt


Preheat your oven and prepare cake mix as directed on the box. Once the batter is prepared, slowly beat in 5-8 drops of green gel food color. Pour batter into cupcake liners, filing them about half way full. Bake according to the chart on the back on the cake mix box. Allow cupcakes to cool before adding the ganache.

Using the method of a double boiler, melt chocolate – place water in a small sauce pot and bring to a bowl. Find a metal or glass bowl that fits over top the pot. As the steam rises from the boiling water, it will melt the chocolate. Once the chocolate is melted, turn off the burner and add in the cream and salt. Whisk to combine until the mixture has a silky sheen.

Dip the tops of each cupcake into the ganache, let the excess drip off and transfer to a baking sheet lined with wax paper. Sprinkle cupcakes with garnish and transfer to the fridge to set for one hour.
