Mandarin Asian Glazed Chicken

Craving a little Asian flavor? We are too! Still trying to get back on track to your New Years resolutions? Yep, we are on that boat too. This recipe has just what you need – it’s packed full of sweet and savory notes that will calm your Asian craving. Wanna a little kick? Add about 1 TBSP of red pepper flakes.

Ingredients:Mandarin Asian Glazed Chicken

  • 2 skinless, boneless chicken breast
  • olive oil
  • salt and pepper
  • ¾ cup plum sauce
  • ½ cup orange juice,
  • 2 inches ginger root, peeled
  • 2 clementines or 1 small can of mandarin oranges, strained
  • 3 tablespoons soy sauce
  • 2 TBSP cilantro, chopped

Directions:

Preheat oven to 400. Heat a large skillet over high heat with a good drizzle of olive oil. Season chicken with salt and pepper and add to the pan. Brown the chicken on each side for about 3-4 minutes. While the chicken is browning, whisk together the glaze. In a small pot over medium-high heat combine the plum sauce, orange juice, ginger root, oranges and soy. Allow the glaze comes to a simmer then lower the heat. Once the chicken is browned pour about ½ the glaze into the pan and move to the oven. Roast the chicken for 20 minutes; flipping the chicken once and adding the remainder of the glaze half way through the cooking time (don’t forget to remove the ginger). Finish with the chopped cilantro.
