Maple Oat Chip Cookies

For January, I decided to make a different treat to celebrate all my New Year birthdays.  I really wanted to use the warm and comforting flavors of maple and oats in this month’s dessert.  It’s amazing how many different sweet and savory things I was able to come up with.  You can make cupcakes, pancakes and trail mix.  I decided to go with big soft cookies.

This month was full of very important birthdays.  My good friend, who’s name is January, had a birthday as the New Year turned.  My “sister” Kelly Roo is turning the BIG 18 at the end of the month.  My cousin, Katy Walters, turned a year older.  But, most importantly, my husband – aka the best sous chef ever, had a weekend long celebration too. Maple Oat Chip Cookies

Happy Birthday to you all.

  • 1 pouch chocolate chip cookie mix
  • 2 packets instant maple oatmeal
  • 1 stick butter, soften
  • 2 eggs

Preheat oven t0 375 and move your rack to the middle of the oven.  In large bowl add cookie mix with all ingredients.  Mix together with electric blender on low speed fr 2 minutes until all is combined.  Spray two large baking sheets with non-stick spray and load 1 spoonful of batter onto the baking sheet at a time.  Make sure that each scoop is the same size.  Bake for about 10 minutes.  Allow to cool and enjoy with warm milk.  Yum!
