Slap You Happy Meatloaf

When we think of comfort food, our minds instantly go to our grandmother’s cooking. Tinsley’s grandmother was locally known for catering abilities. This women had an arsenal of comfort food recipes that could fill a book. Jason’s grandmother was the queen of fried chicken. Her recipe is what we like to call “Finger Linking Good”.

Tinsley’s grandmother had an awesome meatloaf recipe, but we gave it a little twist by using oats instead of bread crumbs. We guarantee this recipe will “Slap You Happy”!

Ingredients:Slap You Happy Meatloaf

  • 3/4 cup oats
  • 1/2 cup milk
  • 2 lbs. 80/20 ground beef
  • 1 sweet onion, 1/2 thinly sliced and 1/2 diced
  • 2 eggs, beaten
  • 2 tsp. Worcestershire sauce
  • 1/4 cup ketchup
  • 1 8oz can tomato sauce, divided into two
  • salt and pepper


Preheat the oven to 350. Add oats and milk to a small prep bowl. Mix to combine and set aside. Add ground beef, chopped onion, eggs, Worcestershire sauce, ketchup, 1/2 of tomato paste, and a generous pinch of salt and pepper. With your hands, gently give the mix 2-3 folds to lightly combine. Add in oat mixture and continue to gently fold – just until well combined.

Transfer the meat to a baking pan or casserole dish and shape mixture into a loaf – about 5 in long and 2 in thick. Pour remaining tomato sauce over the meat and arrange sliced onions on top. Bake for about 1 hour.

Remove from the oven and let rest for 10 to 15 minutes before slicing.
