Mediterranean Jasmine Rice with Nuts and Raisins

Simple yes, but oh so elegant! Pair it with chicken or pork, this side dish is perfect to dress up any simple protein. My recommendation is to try this rice with my Dutch Oven Mediterranean Chicken.

Ingredients:Mediterranean Jasmine Rice with Nuts and Raisins

  • 2 cups cooked jasmine rice
  • 1 cup golden raisins
  • 1/2 cup pepitas (pumpkin seeds)
  • 2 tbsp parsley, roughly chopped
  • salt & pepper
  • olive oil

Directions:

Place pepitas in a dry skillet and toast over low heat – this should only take a few minutes; your nose will know when they are ready. To a large prep bowl, add rice. Drizzle rice with olive oil and season with salt. To the rice, add golden raisins, pepitas, and parsley. Toss to combine and serve.
