Nog and Raisin Scones

It’s egg nog time. Yup, the stuff is everywhere. This year, Jason picked me up a jug of my favorite Christmas drink – thanks love! While it’s tempting to chug it down, I decided to try baking with it. The first thing that came to my mind were scones. As you probably know, I love making scones and CookingShorts features a number of my scone recipes. Adding egg nog to the mix turned out to be a great idea.

Ingredients:Nog and Raisin Scones

  • 2 cups of Jiffy baking mix
  • 1/4 cup sugar
  • 1 cup of egg nog
  • 1 teaspoon of a kosher salt
  • 1 cup golden raisins
  • 1 egg beaten with 1 teaspoon of water

Directions:

Preheat oven to 375. Combine biscuit mix, sugar, salt and raisins. Add in egg nog and gently fold together. Dust your spoon and hands with a little baking mix before handling the dough so it won’t stick. Scoop equal sized mounds onto a greased cookie sheet. If the mounds become sticky, add little more baking mix. Brush the mounds with egg wash and sprinkle with a little sugar. Allow to bake for 7-8 minutes. Enjoy!
