Nutty Cheerio Chicken

You probably haven’t thought of combining breakfast cereal and chicken.  I admit, it sounds very strange.  Before you turn up your nose and click away, give it a try.  When I made this for my husband, he said ‘this is the best damn chicken I’ve ever had’.  The Cheerio and honey really takes this dish to new levels. 

Ingredients:Nutty Cheerio Chicken

  • 2 skinless chicken breasts
  • 3/4 cup of Cheerios – I used Multi-grain but you could use Honey Nut. Whatever you already have is fine.
  • 1/2 cup raw almonds
  • 2 TBSP honey
  • 1 egg
  • salt and pepper


In a small food processor, add cheerios, almonds and honey. Process until it combines and becomes the consistency of Israeli couscous. Pour cheerio mix into a shallow dish.  Beat egg with a splash of water in a separate shallow dish. 

Ensure that your chicken breast is very dry by patting it dry with a paper towel. This will allow for the crust to stick to the chicken. Season chicken with salt and pepper. Create an assembly line: chicken station, egg station, cheerio station and then baking sheet with a cooling rack on top. Dunk the chicken into the egg. Allow to drip and then move it over to the cheerios. Push the chicken into the mix to get a good coating on all sides.  Finish by placing the coated strip on the cooling rack. Place in the oven for about 15 minutes, until the coating browns and the chicken reaches an internal temperature of 165.
