Orange Poached Tilapia

Before the holidays, we’re all on that healthy food kick. You know we all try and save as many calories as we can so that we can have an extra slice of Grandma’s apple pie. Use citrus as your friend in the kitchen. Poaching meats such as chicken or fish with lemon or orange will add tons of flavor without packing on any extra calories.

Ingredients:Orange Poached Tilapia

  • 2 tilapia fillets
  • ½ onion, quartered
  • 1 ribs celery, halved
  • 1 carrot, peeled and halved
  • 2 bay leaves
  • 1 cloves garlic, finely chopped 3 tablespoons flour
  • thyme - a few fresh sprigs, finely chopped
  • 3 oranges, 1 zested and sliced – 2 halved

Directions:

Orange Poached TilapiaPlace the tilapia in a pot with the onion, celery, carrot, thyme, and bay leaves. Juice 2 of the oranges over top the fish and add the halves to the pot. Cover with just enough water to come to the top of the fish. Bring to a light boil. Reduce heat to a simmer for 8-10 minutes until the tilapia turns from a translucent color to a pearly white color. Line your serving plate with orange slices. Carefully remove the fish to a plate and garnish with the orange zest.
