Orange Rice Salad

So like most people, we love carbs and rice is truly one of our favorites. There are many diets out there that have us steering clear of starchy carbs. These diets work, but it’s only a matter of time before you miss the carbs.  We try to choose everything in moderation. If we’re going to indulge on a plate of rice, we try to trick ourselves by turning it into a salad. By adding in extra ingredients, you’re really stretching out those carbs. This helps by making a little look like a lot. In this recipe, you’re adding in healthy fats with your almond slivers and olive oil. You are also getting a serving of fruit and veggies in as well. Ingredients:Orange Rice Salad

  • 2 cups cooked brown rice
  • 1 large navel orange
  • ½ cup almond slivers
  • 2 scallions – chopped
  • salt & pepper
  • olive oil


Place your rice into a large mixing bowl. Place almonds in a dry skillet and toast over low heat – this should only take a few minutes; your nose will know when they are ready. Peel your orange and remove each segment. Cut each segment into bite sized pieces. Place the oranges in with your rice and add almonds and scallions. Season with salt, pepper and a good drizzle of olive oil. Toss to combine and serve.
