Orange Spinach Rice Salad

Rice is truly one of our favorite sides and it’s often our go-to side dish. Sometimes for dinner, I’m happy with just a simple rice salad. I think what we love most about rice is that it is so adaptable. You can change it up a million ways and never feel like you’re repeating. When we’ve had a long, exhausting day, it’s nice to come home and make a simple side that not only fills our bellies, but comforts our souls. This rice salad recipe definitely fits the bill. I recommend pairing this simple rice salad with our Apple Cinnamon Chicken.

Ingredients:Orange Spinach Rice Salad

  • 2 cups of white rice, cooked
  • 1/2 Vidalia onion, sliced
  • 1 6oz pkg baby spinach leaves
  • 1 large orange, peeled, sectioned
  • 2 tbsp butter
  • salt and pepper


In a skillet over medium heat, melt butter. Add onions and season with salt and pepper. Cook onions until soft and tender. Add spinach in batches to the skillet, adding in more as it wilts down. Remove from heat.

To a medium prep bowl, add warm rice, sautéed onions and spinach, and orange segments. Gently toss to combine. Taste for seasoning and transfer to a serving bowl.
