Oreo Surprise Cupcakes

Did you know that this year marks the birthday of perhaps the most iconic cookie, Oreo? Oreo cookies, with their twist, lick and dunk methodology, has been bringing joy to kids and parents for 100 years! Oreos now come in a variety of flavors and sizes and can be found in other foods such as ice cream. We decided to use them in cupcakes. What have you done with your Oreos? Ingredients:Oreo Surprise Cupcakes

  • 1 package of white cake mix
  • 1 cup water
  • 1/3 cup of apple sauce (using apple sause instead of oil cuts down on the fat and calorie content)
  • 3 large eggs
  • 2 tsp pure vanilla extract
  • 28 regular Oreo – 24 whole and 4 lightly crushed for garnish
  • 24 mini Oreo – for garnish
  • 1 container of white frosting
  • yellow food coloring


Heat your oven to 350 and line 24 muffin cups with a liner.  Combine cake mix, water, oil, 1 tsp vanilla extract and eggs in large bowl.  Using a hand mixer, beat on medium speed for 2 minutes.  Fill baking cups 2/3 full, leave a small amount of batter left in the bowl.  Place one oreo in the middle of each cupcake and push it down until the batter covers the Oreo.  Spoon an additional tablespoon over the Oreo.  Bake for about 20 minutes.  Let the cupcakes completely cool before applying the frosting or the frosting will melt.  Scoop your white frosting out of the containter and into a small bowl.  Add one tsp of vanilla extract and about 20 drops of food coloring.  Mix together well and refrigerate until cupcakes are cool.  Using a piping bag or pastry knife, spread an even amount of frosting on each cake.  Garnish with a mini Oreo in the middle of each cupcake and finish with Oreo crumbles.

You can make these for any of your favorite sports teams by simply changing the color of the food coloring.  Enjoy!
