Parmesan Mashed Potatoes

Mashed potatoes – A staple for many protein packed meals and those stubborn guys who claim only to eat ‘meat n’ potatoes’.  Rather than sticking to the same old recipe of literally mashed potatoes and butter, why not step it up a bit?  Here we’ve taken a staple and made it a favorite.  Save room; you’ll want seconds.  Our guess is thirds.

Ingredients:Parmesan Mashed Potatoes

  • 4-6 large red potatoes – peeled and cubed
  • 1 cup of half and half
  • 1/2 cup sour cream
  • 1/2 cup fresh parmesan
  • 2 tbsp fresh dill – finely chopped
  • 1/4 cup butter – cubed
  • salt and pepper


Place cubed potatoes with a healthy pinch of salt in a large sauce pan.  Add enough water to cover the potatoes.  Bring to a boil, then lower the temperature and cook at a simmer for 30 minutes until potatoes are fork tender.  Drain potatoes and place back into the hot pot.  Add half and half, add butter.  Mash ingredients together to your desired consistency.  You can use your food processor if you prefer a lump free mash.  Add parmesan, sour cream and dill.  Lightly mix to combine.  Garnish with an additional sprinkle of paremesan and a sprig of dill.
