This simple veggie side is a perfect complement to our Herb & Caper Fish. The hearty tomatoes, sweet onions and earthy sprouts are perfectly balanced with the salty olives and fresh thyme. These veggies will make your mouth sing!

Roasted Mediterranean Veggies


  • 2 Roma tomatoes – quartered
  • 1/2 small Vidalia onion, sliced
  • 7-8 brussel sprouts – halved
  • 1/4 cup of kalamata olives, pitted
  • fresh thyme, roughly chopped
  • salt and pepper


Drizzle vegetables with olive oil and season with salt, pepper and thyme. Roast in the oven for 15-20 minutes. Serve.
