Roasted Pineapple Salad

Tried of the same old fruit cocktail? Check out my twist on a classic. Roasting fruit brings out a golden sweet flavor that makes you go back for seconds. Delish!

Ingredients:Roasted Pineapple Salad

  • 1 cup fresh pineapple, cubed
  • 1 cup red grapes
  • olive oil
  • salt

Preheat oven to 400 degrees. Place fruit in a small bowl and drizzle lightly with olive oil. Season fruit with a pinch of salt. Spread fruit onto a baking sheet and roast in the oven for 15 minutes. Scoop into a serving a bowl and enjoy.
