Santa’s Trail Mix

HO HO HO, Santa is on his way. Crossing the globe in one night to deliver presents to all the girls and boys of the world is exhausting. My “Santa” needs a snack to help keep him on task. This is a perfect sweet and salty mix to set out for Santa. You can serve this at your Christmas Eve party. You could also find cute treat bags and hand them out as homemade gifts for your co-workers, boss or friends.

Ingredients: Santa's Trail Mix

  • 2 cup raw almonds
  • 2 cup baby pumpkin seeds – pepitas
  • 3/4 cup raw sunflower seeds
  • 1/4 cup maple syrup – higher quality the better
  • 1 cup dried cherries
  • 1 cup of white chocolate chips
  • coarse salt

Directions

Preheat the oven to 300.  Line two baking sheets with foil and spray with cooking spray.  In a large bowl, toss the pumpkin seeds, almonds and sunflower seeds in the syrup until evenly coated.  Season with salt.  Spread the nuts out, in an even single layer, on the baking sheet.  Bake the nuts until just golden, about 20 minutes.

Cool them down on the pan.  When the nuts still have a slight heat to them add the cherries and white chocolate chips.  Quickly toss to combine.  The chocolate will slightly melt and allow the nuts to stick and clump.  Before the chocolate melts further, move into freezer.  Scoop mix into holiday containers and share.  Don’t forget to leave a bag out for Santa!

    Sounds yummy but I’m not crazy about maple syrup….what do you think about corn syrup?
