Simple Blueberry Bread Pudding
Yum! Old fashioned, warm bread pudding. This custard-like mixture is a rich, creamy, decadent dessert. We have fool-proofed this recipe so it’s crunchy on the top but super moist on the inside. If you think you don’t love bread pudding, you have to try this recipe. It will blow your mind (boom).
Ingredients:
- 2 cups sugar
- 5 eggs, beaten
- 2 cups milk
- 2 tsp vanilla extract
- 3 cups stale thick sliced bread, cubed
- 1/2 cup brown sugar
- 1/2 stick butter, softened
- 1 cup dried blueberries
Directions:
Preheat the oven to 350 degrees. Spray a casserole dish with non-stick cooking spray, set aside.
Mix together sugar, eggs, milk and vanilla in a medium prep bowl. Pour in cubed bread and mixture to combine. Set aside 10minutes.
In small prep bowl, mix and crumble together brown sugar, butter, and blueberries. Pour bread mixture into prepared pan. Smear brown sugar mixture over the top and bake for 35 to 45 minutes, or until set.
Remove from the oven and allow to slightly cool.
