Spring Carrot Ribbon Salad

This spring time salad is the perfect complement to your weeknight chicken repertoire. This playful but stylish recipe makes for a beautiful presentation. We love the pops of color that the carrots and red onions add to the salad.

Ingredients:Spring Carrot Ribbon Salad

  • 5 medium carrots
  • 1/2 shredded green cabbage
  • 1/2 small red onion, thinly sliced (or shallot- about 1/2 cup)
  • 1/2 cup alfalfa sprouts
  • 1/4 cup rice wine vinegar
  • 1/4 cup olive oil
  • honey, just a squeeze
  • salt and pepper
  • red pepper flakes, just a pinch

Directions:

Peel the carrots, then shave them with the vegetable peeler into long, thin ribbons. Add carrots, cabbage and red onion to a medium prep bowl. Set aside.

Add vinegar, olive oil and honey to a small prep bowl. Whisk to combine and season with salt, pepper and red pepper flakes.

Drizzle dressing over the veggies and toss to combine. All the veggies to absorb dressing for 10 minutes. Add in alfalfa sprouts and toss to combine.
