One thing we love to do is re-invent classic mixed veggies in a way that is new and exciting. Re-inventing your side dishes will help you stick to your 2012 resolution of eating healthier and adding more veggies to your diet. Making small changes allow you to look forward to your next meal instead of dreading the scale. This in turn will really help you beat junk food cravings.

Ingredients:Stir Fry String Beans

  • ½ pound of fresh string beans, ends trimmed
  • 1 tbsp of butter
  • 1 tbsp olive oil
  • ¼ cup red or orange bell pepper, sliced
  • ¼ cup red onion
  • ¼ cup of carrots, matchstick sized
  • 1 clove of garlic, finely chopped or grated
  • salt and pepper

Directions:

Place a skillet on over medium high. Add butter and oil. Once the butter is melted, add all veggies into the hot skillet. Allow veggie to heat and start to sear, then quickly toss. Cook the veggies for 6-10 minutes, constantly tossing. Remove from heat once veggies start to slightly become tender and all sides have a gentle sear. Plate and enjoy.
