Strawberry and Crème Mini Pies

Strawberry and cream cheese are best friends and we figured out a way to bake these decadent flavors into adorable mini pies. We made these on a Sunday morning and they were gone by noon. They are INCREDIBLE. The cream cheese gave the dough a tangy flavor, while the filling is bright with flavors of summer. This recipe is the perfect comfort treat on a hot summer night. Oh, and maybe make a double or even triple batch. These yummy treats will go fast!

Ingredients:Strawberry and Crème Mini Pies

Dough:

  • 1 cup flour, plus 2-3 tbsp for dusting
  • 2 tsp sugar
  • 1/4 tsp salt
  • 6 tbsp butter, chilled, cut into cubes
  • 6 ounces cream cheese, chilled, cut into cubes
  • 2 tbsp raw sugar
  • 1 egg

Strawberry and Crème Mini PiesTo a food processor, add flour, sugar and salt. Pulse ingredients to mix. Add in the butter and process until the mixture resembles wet sand. Add the cream cheese and pulse until the dough comes together in large clumps. Place the dough on a floured surface and gently knead, just enough to incorporate the cream cheese. Form the dough into an oval disk, place in a plastic bag and chill for at least one hour.

Roll the dough out. Cut the dough into circles using a biscuit cutter. If the dough starts to feel tacky, place it in the freezer for about 5 minutes, this will allow the cream cheese and butter to firm up.

Lay out your circle cut outs on the baking sheet. Spoon about 1/2 tsp of cream cheese and 1/2 tsp of jam to the center of each circle. Lay down the top dough and use your fingers to press the dough gently together, and then crimp the seal with a fork. Use a paring knife to create a small slit in the center. Beat egg in a small bowl to make an egg wash. Brush the tops of each circle with the egg wash. Sprinkle the tops with raw sugar. Bake for about 15 minutes or until the mini pies are golden brown.
