Sweet Tomato and Onion Tian

I (Tinsley) am so sad that summer is ending and as is the season of garden tomatoes. One of my favorite things about summer is fresh vine- ripened tomatoes. All you need is just a little salt and pepper with a drizzle of olive oil … mmm … yah, my mouth is watering just writing about it.

Before the cold weather makes it appearance, you should try this recipe. Perfect to eat alone with a side of rice or you can add in some grilled chicken for protein.

Ingredients:Sweet Tomato and Onion Tian

  • 2 onions, sliced into 1/4-inch thick rounds
  • 2-3 tomatoes, sliced into 1/4-inch thick rounds
  • 1/4 cup shredded Parmesan
  • ¼ cup panko bread crumbs
  • 1 tbsp Italian seasoning
  • 1 tbsp butter, melted
  • 2 cloves garlic, minced
  • red pepper flakes, just a pinch
  • olive oil
  • salt and pepper


Preheat the oven to 375. Rub olive oil inside a small baking dish. Lay all your veggies out on a baking sheet, season with salt and pepper. Drizzle olive oil over the veggies and sprinkle with minced garlic and red pepper. Layer the onions and tomato slices in rows in the baking dish. In a small prep bowl, toss panko with Parmesan cheese, melted butter and Italian seasoning. Bake until the top is golden, which should be about 20 minutes. Remove from the oven and allow to cool for 5 minutes. Serve warm or at room temperature – enjoy!
