Tastefully Simple Coconut Mocha Cookies

When Starbucks introduced the Coconut Mocha Frapp, I had to figured out a way to out do their recipe and come up with my own Coconut Mocha recipe. Thankfully, I had Tastefully Simple to my rescue. These amazing little bites are the prefect flavor combination. The cookies have a rich, buttery flavor that is accompanied by the sweet, tropical twist of the coconut. Of course there’s a hint of coffee for a little kick. They’re the perfect after lunch treat! Make them in batches as they freeze well for a quick after dinner snack.

Ingredients:Tastefully Simple Coconut Mocha Cookies

Directions:

Pre-heat a dry skillet over medium low heat. Add shredded coconut to the pan with a pinch of salt. Keep an eye on the pan and as the coconut starts to brown, toss to evenly toast. Set coconut aside and allow to cool. In a small bowl, combine all ingredients. Chill for 1 hour to allow the flavors to combine. Spoon the coconut mocha filing on one cookie and then top with another. Continue until all the cookies are completed.
