Tastefully Simple Garlic and Onion Roasted Potato Medley

I recently discovered purple potatoes at my local farmer’s market. I never knew these purple potatoes existed; boy have I been missing out! While these purple potatoes don’t really taste any different from other fingerling pototes, they sure do make an amazing persentation. Now that I know what I am looking for, I have even seen them at my local market. Wahoo, ohh how I love food!

Ingredients:Tastefully Simple Garlic and Onion Roasted Potato Medley

Directions:

Preheat the oven to 450 degrees. Place the potatoes in a large pot and cover with water. Season the water with salt. Cover and bring water to a boil. Cook uncovered for about 10 minutes, just until the potatoes start to become fork tender. Add green beans to the pot and continue to cook for another 2-3 minutes. Drain and place the potatoes back into the hot pot to rest for about 15 minutes. Stock the green beans in an ice water bath to stop the cooking process.

Remove the potatoes from the pot and place them on a baking sheet. Drizzle olive oil over the potatoes, making sure they are evenly coasted. Add the Garlic Garlic and Onion Onion, toss to combine. Season with a pinch of salt and pepper. Space the potatoes evenly on the sheet pan. Place them in the oven and roast for 20 to 25 minutes, until they start to become a little crispy. Remove from the oven and add your green beans. Toss to combine with the potatoes and spread them out again. Continue to roast for another 10 minutes. Remove from the oven and allow to rest just for a minute. Move to your serving dish and garnish with a additional light drizzle of olive oil.
