Tomato and Feta Pasta Salad

If you’re looking for the perfect summer pasta salad, look no further.  This easy to make salad is not only beautiful, but delicious.  Make this for a summer time lunch or light dinner. 

Ingredients:Tomato and Feta Pasta Salad

  • 1 cup of cooked shell pasta
  • 3/4 cup of multi colored cherry tomatoes – halved
  • 1/2 cup of fresh feta cheese – crumbled
  • olive oil
  • salt & pepper
  • fresh chives – for garnish

Directions: 

In a small mixing bowl, add in tomatoes and feta cheese. Season with mixture with salt and pepper, followed by a good drizzle of olive oil. Remember that the feta cheese is also salty, so taste before you season and taste again after to get the flavor just right. Use a wooden spoon to lightly toss together, mixing the tomatoes and cheese in the pasta.

Pour pasta in serving dish and chill for 1-2 hours before serving to allow the flavors to combine. When serving garnish with about 2 TBSP of freshly cut chives or scallions.
