Yep, we love brussel sprouts. It’s truly become one of our favorite go-to veggies. There are a million ways can you dress them up, they’re healthy and they’re so incredibly cute. Here’s another veggie medley just for you.

Ingredients:Tomato Burst Medley

  • 12-15 brussel sprouts – halved with ends and outer leaves removed
  • 6-7 orange cherry tomatoes, halved
  • ¼ red onion, chopped
  • ½ red pepper, chopped
  • olive oil
  • salt & pepper


Preheat oven to 350. Add all veggies (except tomatoes) to a medium prep bowl. Drizzle with olive oil and season with salt & pepper. Mix to coat evenly. Spread seasoned veggies out on a baking sheet and pop it in the oven for 15 minutes. Oil and season the tomatoes as well. Remove baking sheet from oven and use a spatula to flip; the undersides of the sprouts should be a gorgeous brown color. Add the tomatoes to your veggie mix and place back in the oven to cook for another 7- 10 minutes. As soon as the tomatoes start to slump, remove from oven and serve.
