Very Cherry Rice Salad

Finding a really good side dish that’s versatile, easy-to-make, yet yummy can sometimes be a challenge (unless of course you’re a regular reader of CookingShorts.com!!) I love talking a pretty standard side – brown rice – and adding a lot of ingredients to it. Why just have boring brown rice, you know? Adding in herbs pumps up the flavor, but I like to also include various fruit in my rice sides. And why not, you know? In this case I used cherries, which added a nice citrus balance to the overall dish. My Very Cherry Rice Salad can be served year round, but the red cherries along with the green cucumbers and scallions make me think of the winter holidays.

Ingredients:Very Cherry Rice Salad

  • 2 cups cooked brown wild rice
  • 1 cup fresh black cherries, pitted and sliced
  • ½ English cucumber, sliced into half moons
  • 2 scallions, thinly sliced
  • salt and pepper
  • olive oil

Directions:

Place your rice into a large mixing bowl. Places the cherries, cucumber and scallions in with your warm rice and season with salt and pepper. Drizzle with olive oil and toss to combine. Allow the flavors to combine.

Serve as a light lunch or a perfect side dish.
